Tokie's Cookies

What you will need:

  • Tokie's Maple Jacks
  • Tokie's Thelma's
  • 1 1/2 sticks of unsalted butter
  • 2 large eggs
  • Milk (any kind)
  • large bowl
  • measuring cup
  • measuring spoon
  • large mixing spoon
  • two (2) cookie sheets OR 3 if smaller cookies are in order

Pre-heat oven to 350 degrees

Grease or paper baking pans. (I don't use non-stick)

In a large bowl, mix the following:

  • 1 1/2 cup Maple Jacks maple baking mix
  • 1 1/2 cup Thelma's, white chocolate brownie & cake mix
  • 1 1/2 sticks unsalted butter (melted) ***Regular butter can be used as well
  • 2 large eggs (slightly beaten)
  • 2 tablespoons of any milk

Blend dry mix evenly

Add melted butter

Stir (Batter will appear dry and a bit lumpy...that's the white chocolate shavings/chips in the Thelmas)

Add slightly beaten large eggs

Mix with either a large spoon or with your hands. Add 12 oz of any chip or dried diced Cran-raisins...OR just leave the dough as is, the white chips will be evident in the wet dough, however melts during the baking process.

Using your hands or spoon, ball up approximately a 1 inch ball of dough, place it on the cookie sheet and pat down slightly. (if larger cookies are wanted, just increase the size of the dough ball)

Bake approximately 15 minutes.

***If a drier cookie is wanted, add 1/2 teaspoon of Baking Soda. (the combination of the acids in the "gluten free non aluminum baking powder" already in the mix and the added Baking Soda, creates a different leavening agent.

Other variations:
Spice Cookies: delete 1/2 (1/4 cup) stick of butter. Add 1/4 cup molasses. Add 1 tsp ground cloves. Add 1/4 tsp of nutmeg. Follow mixing and baking directions as mentioned above.
